Abstract

This update includes new information and factors needed to assess exposure to environmental agents that occur from ingestion of meats, dairy products, and fats that has become available since the Exposure Factors Handbook: 2011 Edition was released. The recommended values have been revised, as needed, to reflect the new information. This chapter includes updated general population data; new data on intake among pregnant and lactating women; and information from several new sources.

Meats, dairy products, and fats may become contaminated with toxic chemicals by several pathways. Therefore, to assess exposure through this pathway, information on meat, dairy, and fat ingestion rates is needed.
